Description
A hearty and flavorful Weight Watchers cabbage soup that is zero points on many Weight Watchers plans. This soup is packed with vegetables and is a satisfying low-calorie meal.
Ingredients

- 1 head of cabbage, chopped
- 6 carrots, chopped
- 6 celery stalks, chopped
- 2 large onions, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 (28 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can tomato sauce
- 8 cups vegetable broth
- 1 tablespoon dried parsley
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and black pepper to taste
Instructions
- Combine all ingredients in a large pot or slow cooker.
- If using a pot, bring to a boil, then reduce heat and simmer for at least 30 minutes, or until vegetables are tender.
- If using a slow cooker, cook on low for 6-8 hours or on high for 3-4 hours.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a spicier soup, add a pinch of red pepper flakes.
- You can add other zero-point vegetables like mushrooms or zucchini.
