Description

A hearty and flavorful Weight Watchers cabbage soup that is zero points on many Weight Watchers plans. This soup is packed with vegetables and is a satisfying low-calorie meal.


Ingredients

Scale
  • 1 head of cabbage, chopped
  • 6 carrots, chopped
  • 6 celery stalks, chopped
  • 2 large onions, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 8 cups vegetable broth
  • 1 tablespoon dried parsley
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste


Instructions

  1. Combine all ingredients in a large pot or slow cooker.
  2. If using a pot, bring to a boil, then reduce heat and simmer for at least 30 minutes, or until vegetables are tender.
  3. If using a slow cooker, cook on low for 6-8 hours or on high for 3-4 hours.
  4. Season with salt and pepper to taste.
  5. Serve hot.

Notes

  • For a spicier soup, add a pinch of red pepper flakes.
  • You can add other zero-point vegetables like mushrooms or zucchini.
