Instructions

  1. Rinse the tapioca in a fine-mesh sieve.
  2. Combine tapioca, milk, sugar, and salt in a saucepan.
  3. Let it sit for 5 minutes.
  4. Cook over medium heat, stirring constantly, until it boils.
  5. Reduce heat and simmer for 15-20 minutes, stirring frequently, until thickened.
  6. Remove from heat.

  9. Cook for 1 minute more. Do not boil.
