Instructions

  1. Preheat your oven to 425°F (220°C).
  2. On a lightly floured surface, roll out one disk of pie dough into a 12-inch circle. Carefully transfer it to a 9-inch pie plate. Trim any excess dough, leaving about a 1/2-inch overhang.
  3. In a large bowl, toss the sliced apples with 3/4 cup sugar, flour, cinnamon, nutmeg, and lemon juice until evenly coated.
  4. Pour the apple mixture into the pie crust. Dot the top with the small pieces of butter.
  5. Roll out the second disk of pie dough into an 11-inch circle. Place it over the apple filling. Trim the edges, leaving about a 1/2-inch overhang. Crimp the top and bottom crusts together to seal. Cut several vents in the top crust to allow steam to escape.
  6. Brush the top crust with the beaten egg wash and sprinkle with the remaining 1 tablespoon of sugar.
  7. Bake for 15 minutes at 425°F (220°C).
  8. Reduce the oven temperature to 375°F (190°C) and continue to bake for another 35-45 minutes, or until the crust is golden brown and the filling is bubbly. If the crust starts to brown too quickly, you can loosely tent it with foil.
  9. Let the pie cool on a wire rack for at least 2-3 hours before slicing and serving. This allows the filling to set.
