  • Fresh parsley for garnish


Instructions

  1. Sear the Beef: Heat olive oil in a Dutch oven or large pot. Season beef cubes with salt and pepper, then brown in batches until golden. Remove and set aside.
  2. Sauté Vegetables: In the same pot, add onion, carrots, and celery. Cook for 5 minutes until softened, then stir in garlic and tomato paste for 1 minute.
  3. Deglaze and Build Base: Pour in a splash of broth to deglaze, scraping up browned bits. Add Worcestershire sauce, thyme, paprika, and bay leaves.
  4. Simmer the Stew: Return beef to the pot. Add the remaining broth and barley. Bring to a boil, then reduce heat and simmer covered for 1 ½ to 2 hours, stirring occasionally.
  5. Check for Doneness: When beef is fork-tender and barley is cooked through, adjust seasoning as needed. Remove bay leaves.

Notes
