Seriously, it’s the perfect weeknight meal because it’s super easy, totally delicious, and even my pickiest eaters gobble it up. I’m a busy mom, so I’m all about quick and effortless recipes, and this one is a serious winner. It’s a real crowd-pleaser and one of those easy dinner recipes for family that you can whip up without spending hours in the kitchen.

I first came across a similar recipe at a potluck years ago, and I knew I had to make it my own. After a few tweaks and a whole lot of taste testing (someone had to do it!), I finally perfected it. Now, this BBQ Chicken & Cornbread Casserole is a staple in my house, and I’m so excited to share it with you. It’s the kind of dish that brings everyone to the table, and trust me, there are never any leftovers! So, let’s dive into how to make this kid-friendly dinner that’s also a total cinch.

Ingredients You’ll Need for This Delicious BBQ Chicken & Cornbread Casserole

Alright, let’s gather up all the goodies! The best part? It’s all stuff you probably already have in your pantry! Here’s what you’ll need to make this easy dinner.

Chicken: The Heart of Your BBQ Chicken & Cornbread Casserole

Okay, so for the chicken, you’ve got options! You can totally use a store-bought rotisserie chicken to make things super easy – I do that when I’m in a hurry! Just grab about 2 cups of the cooked chicken and shred it. Or, if you have leftover cooked chicken, that works perfectly too. Make sure it’s shredded so it mixes in nicely. You can also cook your own chicken breasts and shred them, but honestly, the rotisserie chicken is a lifesaver!

The Corn and Beans: Adding Texture and Flavor

Next up, we need some corn and beans to add some texture and a little bit of goodness! You’ll need one 15-ounce can of corn – make sure you drain it! And then, grab a 15-ounce can of black beans, rinse them off, and drain ’em. You can use fresh corn if you have it! Just make sure it’s cooked first.

The BBQ Sauce: Choosing the Right One

The star of the show, the BBQ sauce! This is where you can really customize things. I usually go for a sweet and smoky BBQ sauce, but you can use whatever you like! If you want a little kick, go for a spicy one! Whatever floats your boat!

Cornbread Mix and Cheese: The Perfect Toppings

Finally, we need our cornbread and cheese. For the cornbread, grab a box of your favorite cornbread mix. I usually use Jiffy, but any brand will do! And for the cheese, you’ll need about 1 cup of shredded cheddar cheese. You can use a different cheese if you like, but cheddar is my go-to!

BBQ Chicken & Cornbread Casserole Recipe: Step-by-Step Instructions

Alright, now for the fun part: let’s get this easy dinner cooking! Don’t worry, it’s super simple, I promise. Follow along, and you’ll be enjoying this quick dinner recipe for family in no time!

Preparing the Chicken Mixture

First things first, we’ve gotta get that chicken mixture ready. In a big bowl (I like to use a big one so I don’t make a mess!), gently combine your shredded chicken, drained corn, and drained black beans. Then, pour in your BBQ sauce – I usually start with about a cup, but you can add more or less depending on how saucy you like it! Mix it all up until everything is evenly coated. Make sure you get all the chicken covered in that delicious sauce!

Assembling the BBQ Chicken & Cornbread Casserole

Okay, time to put it all together! Grab a 9×13 inch casserole dish. Now, I always grease my dish first, just to make sure nothing sticks – nobody wants a stuck-on casserole! Pour that yummy chicken mixture into the dish and spread it out evenly. Make sure it’s nice and flat! Now, prepare your cornbread mix according to the package instructions and, here’s the fun part, pour it right over the chicken mixture! Finally, sprinkle that shredded cheddar cheese all over the top. Yum!

Baking Instructions

Now, pop that casserole into a preheated oven at 375°F (190°C). Bake it for about 25-30 minutes. You’ll know it’s ready when the cornbread is golden brown and the cheese is melted and bubbly. You might see the edges pulling away from the sides. Also, a toothpick inserted into the center should come out clean.

Serving Suggestions

Once it’s out of the oven, let it cool for a few minutes before you dig in, so it can set up a bit. Then, slice it up and serve it with a big smile! It’s one of those simple dinner ideas that everyone loves, and it’s perfect for a weeknight. Enjoy!

Tips for Making the Best BBQ Chicken & Cornbread Casserole

Okay, so you want to make this BBQ Chicken & Cornbread Casserole absolutely *perfect*? Here are a few pro tips I’ve learned along the way, to make sure your casserole is the star of the show!

Saving Time with Pre-Cooked Chicken

Listen, we’re all busy, right? So, my biggest time-saving tip is to use a rotisserie chicken! Seriously, it’s a lifesaver. You can shred it in minutes and skip the whole cooking-a-chicken-breast thing. Trust me, it’s one of the best easy healthy dinners tricks out there!

Adjusting the Flavors to Your Taste

Don’t be afraid to play around with the BBQ sauce! That’s where you can really make it your own. If you like it sweet, go for a sweeter sauce. If you want a little heat, grab a spicy one! Experiment until you find your perfect flavor combination!

Ensuring Even Baking

For the perfect bake, make sure your chicken mixture is evenly spread in the casserole dish. Also, it’s super important to make sure your oven is at the correct temperature! This helps the cornbread bake evenly and get that gorgeous golden-brown color. Nobody wants a soggy middle!

Frequently Asked Questions About **BBQ Chicken & Cornbread Casserole**

I know, I know, you probably have a bunch of questions, and that’s totally okay! This BBQ Chicken & Cornbread Casserole is pretty straightforward, but I get it, we all like to be prepared! So, let’s tackle a few of the most common questions I get. Hopefully, these will help you make this easy dinner recipe for family even easier!

Can I make this **BBQ Chicken & Cornbread Casserole** ahead of time?

Absolutely! This is a fantastic make-ahead meal, which makes it one of my favorite dump and go crockpot dinners. You can totally prep it in advance. Just assemble the casserole, but *don’t* bake it. Cover it tightly with foil or plastic wrap and pop it in the fridge. It’ll be good for a day or two. When you’re ready to eat, just bake it as usual! You might need to add a few extra minutes to the baking time since it’s coming straight from the fridge. Or, you can freeze it! Assemble the casserole, wrap it tightly, and freeze it. Then, thaw it in the fridge overnight before baking.

What are some good substitutions for the ingredients to make it a **simple dinner idea**?

Oh, this is one of those flexible recipes where you can swap things out, which is awesome! If you don’t have black beans, use pinto beans or even kidney beans. No corn? You can totally skip it, or use frozen corn instead of canned. Got leftover cooked ground beef or turkey? Use that instead of chicken! It’ll be a different flavor, but still delicious! You can use any cheese you like for this simple dinner idea, too. Swiss cheese works great. Don’t stress too much about having everything *exactly* the same. Improvise!

How can I make this **casserole** spicier?

If you like a little heat, this is the perfect recipe to customize! The easiest way to kick up the spice is to use a spicy BBQ sauce. There are tons of great ones on the market! You can also add a pinch of cayenne pepper or some red pepper flakes to the chicken mixture. Another option is to toss in a can of diced green chiles or a few chopped jalapeños. Just be careful, and start small – you can always add more heat, but you can’t take it away!

Variations to Elevate Your BBQ Chicken & Cornbread Casserole

Okay, so you’ve made the casserole, awesome! But you know me, I’m always looking for ways to jazz things up! Here are a few ideas to get you started on making this your own signature dish. Think of these as ways to really make it pop. You know, to turn a great dinner into a *spectacular* one!

Adding Vegetables

Want to sneak in some extra veggies? Smart move! You could add a can of diced tomatoes and green chilies. Or, saute some onions and bell peppers before you add the chicken mixture. You can also add frozen peas or corn to the mix! Just add them in with the chicken and beans.

Spice it Up!

If you’re a fan of a little heat, you’re in luck! Try using a smoky BBQ sauce. Or, add a dash of your favorite hot sauce or a pinch of cayenne pepper to the chicken mixture. A little bit of chipotle powder would also be a fantastic addition. Trust me, it’s a great way to add some depth of flavor!

Cheese Variations

I love cheddar, but hey, the cheese possibilities are endless! Try pepper jack for a spicy kick, or Monterey Jack for a milder flavor. A blend of cheeses is also a great idea! You can also sprinkle a little bit of cheese on top during the last 10 minutes of baking to get a nice, melty layer on top.

Serving Suggestions for Your BBQ Chicken & Cornbread Casserole

So, you’ve got this amazing BBQ Chicken & Cornbread Casserole, and you’re ready to serve it. Wonderful! But what to serve with it? Here are a few ideas to round out the meal and make it a complete feast!

Complementary Side Dishes

I love to serve this with a fresh side salad with a simple vinaigrette – it cuts through the richness of the casserole! Some coleslaw is also a great option. For a heartier meal, try some roasted broccoli or green beans. Honestly, anything goes! Enjoy!

Storage and Reheating Instructions

Okay, so you’ve got leftovers? Awesome! This BBQ Chicken & Cornbread Casserole is just as good the next day, maybe even better! Let it cool completely, then store it in an airtight container in the fridge for up to 3-4 days. When you’re ready to eat, you can reheat it in the microwave (about a minute or two) or in the oven at 350°F (175°C) until heated through. Easy peasy!
