Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 cup chopped onion
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped zucchini
  • 1 cup chopped green beans
  • 1/2 cup small pasta


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  2. Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more, until fragrant.
  4. Pour in the chicken broth and diced tomatoes. Add the Italian seasoning, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer, covered, for 15 minutes.
  6. Add the zucchini and green beans. Continue to simmer for another 10 minutes, or until the vegetables are tender.
  7. Stir in the pasta and cook according to package directions, usually about 8-10 minutes, until al dente.
  8. Taste and adjust seasonings as needed. Serve hot.

Notes

  • For a thicker soup, mash some of the cooked vegetables against the side of the pot.
  • You can add other vegetables like corn, peas, or spinach.
  • This soup freezes well. Let it cool completely before freezing.
