- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 cup chopped onion
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 8 cups chicken broth
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup chopped zucchini
- 1 cup chopped green beans
- 1/2 cup small pasta
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add the chopped onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more, until fragrant.
- Pour in the chicken broth and diced tomatoes. Add the Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and simmer, covered, for 15 minutes.
- Add the zucchini and green beans. Continue to simmer for another 10 minutes, or until the vegetables are tender.
- Stir in the pasta and cook according to package directions, usually about 8-10 minutes, until al dente.
- Taste and adjust seasonings as needed. Serve hot.
Notes
- For a thicker soup, mash some of the cooked vegetables against the side of the pot.
- You can add other vegetables like corn, peas, or spinach.
- This soup freezes well. Let it cool completely before freezing.
