Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 6 ounces crushed tortilla chips
  • Optional toppings: sour cream, salsa, guacamole, chopped onions, jalapenos


Instructions

  1. Brown ground beef in a skillet. Drain off any grease.
  2. Stir in taco seasoning and water. Simmer for 5 minutes.
  3. Add black beans, corn, and diced tomatoes and green chilies. Cook until heated through.
  4. Pour mixture into a greased casserole dish.
  5. Sprinkle with cheddar cheese.
  6. Bake at 350°F (175°C) for 20 minutes, or until cheese is melted and bubbly.
  7. Top with crushed tortilla chips.
  8. Serve with your favorite toppings.

  • You can use ground turkey or chicken instead of ground beef.
