- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 cup shredded cheddar cheese
- 6 ounces crushed tortilla chips
- Optional toppings: sour cream, salsa, guacamole, chopped onions, jalapenos
Instructions
- Brown ground beef in a skillet. Drain off any grease.
- Stir in taco seasoning and water. Simmer for 5 minutes.
- Add black beans, corn, and diced tomatoes and green chilies. Cook until heated through.
- Pour mixture into a greased casserole dish.
- Sprinkle with cheddar cheese.
- Bake at 350°F (175°C) for 20 minutes, or until cheese is melted and bubbly.
- Top with crushed tortilla chips.
- Serve with your favorite toppings.
Notes
- You can use ground turkey or chicken instead of ground beef.
- Feel free to add other vegetables, such as bell peppers or onions.
- Adjust the amount of taco seasoning to your liking.
- For a spicier casserole, use a hotter variety of diced tomatoes and green chilies.
