Ingredients

  • 1 cup brown lentils, cooked
  • 1 cup walnuts, chopped
  • 1 cup rolled oats
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped carrot
  • 2 cloves garlic, minced
  • 1/4 cup vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • Salt to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine cooked lentils, chopped walnuts, rolled oats, chopped onion, celery, carrot, and minced garlic.
  3. In a small bowl, whisk together vegetable broth, soy sauce, olive oil, sage, thyme, and black pepper.
  4. Pour the wet ingredients over the dry ingredients and mix well until everything is evenly combined.
  5. Season with salt to taste.
  6. Press the mixture firmly into a loaf pan.
  7. Bake for 40-50 minutes, or until the loaf is firm and golden brown on top.
  8. Let the loaf cool in the pan for 10 minutes before slicing and serving.

Notes

  • For a crispier topping, you can brush the loaf with a little extra olive oil before baking.
  • This loaf can be made ahead of time and reheated.
