A festive and bright vanilla cake with pomegranate and a sweet glaze.
Ingredients

- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup (2 sticks) unsalted butter, softened
- 2 cups granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup milk
- 1 cup pomegranate arils
- For the Glaze: 1 cup powdered sugar, 2-3 tbsp milk, 1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a cake pan.
- Whisk together flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla.
- Gradually add dry ingredients and milk alternately, beginning and ending with dry ingredients.
- Gently fold in pomegranate arils.
- Pour batter into prepared pan and bake for 30-35 minutes.
- Let the cake cool completely.
- Whisk together glaze ingredients.
- Drizzle glaze over the cake.
Notes
- You can substitute the pomegranate with other berries.
- For a richer flavor, use buttermilk instead of milk.
- Adjust sweetness of glaze to your liking.
