Description

A festive and bright vanilla cake with pomegranate and a sweet glaze.


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup milk
  • 1 cup pomegranate arils
  • For the Glaze: 1 cup powdered sugar, 2-3 tbsp milk, 1/2 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a cake pan.
  2. Whisk together flour, baking powder, and salt.
  3. Cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Gradually add dry ingredients and milk alternately, beginning and ending with dry ingredients.
  6. Gently fold in pomegranate arils.
  7. Pour batter into prepared pan and bake for 30-35 minutes.
  8. Let the cake cool completely.
  9. Whisk together glaze ingredients.
  10. Drizzle glaze over the cake.

Notes

  • You can substitute the pomegranate with other berries.
  • For a richer flavor, use buttermilk instead of milk.
