Ingredients

  • 2 large eggs
  • 4 cups all-purpose flour, plus more for dusting
  • 4 tablespoons unsalted butter, melted
  • Vegetable oil, for frying
  • Powdered sugar, for dusting
  • 1 teaspoon vanilla extract


Instructions

  1. Warm the milk. Add yeast and a pinch of sugar. Let stand for 5 minutes.
  2. In a bowl, whisk together sugar, salt, and eggs.
  3. Add the yeast mixture and melted butter to the egg mixture.
  4. Gradually add flour, mixing until a dough forms.
  5. Knead the dough. Let it rise for 1 hour.
  6. Roll out the dough. Cut into squares.
  7. Heat oil. Fry beignets until golden.
  8. Dust with powdered sugar and vanilla extract.
  9. Serve immediately.
