- 1 boneless turkey breast (about 3-4 pounds)
- 1 pound cooked and crumbled sausage
- 2 cups cooked and chopped chestnuts
- 1 cup breadcrumbs
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
- Kitchen twine
Instructions
- Preheat your oven to 375°F (190°C).
- Butterfly the turkey breast and pound it to an even thickness.
- In a bowl, combine the crumbled sausage, chopped chestnuts, breadcrumbs, onion, celery, garlic, parsley, thyme, salt, and pepper. Mix well.
- Spread the stuffing mixture evenly over the pounded turkey breast, leaving a small border.
- Roll up the turkey breast tightly to form a ballotine.
- Secure the ballotine with kitchen twine at intervals.
- Season the outside of the ballotine with salt and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat. Sear the ballotine on all sides until golden brown.
- Transfer the skillet to the preheated oven.
- Roast for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
- Let the ballotine rest for 10-15 minutes before slicing and serving.

- You can use pre-cooked chestnuts for convenience.
- Adjust the seasoning of the stuffing to your preference.
