Description

A delicious turkey ballotine filled with a savory chestnut and sausage stuffing, perfect for a special occasion.


Ingredients

  • 1 boneless turkey breast (about 3-4 pounds)
  • 1 pound cooked and crumbled sausage
  • 2 cups cooked and chopped chestnuts
  • 1 cup breadcrumbs
  • 1/2 cup chopped onion
  • 1/4 cup chopped celery
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Kitchen twine


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the turkey breast and pound it to an even thickness.
  3. In a bowl, combine the crumbled sausage, chopped chestnuts, breadcrumbs, onion, celery, garlic, parsley, thyme, salt, and pepper. Mix well.
  4. Spread the stuffing mixture evenly over the pounded turkey breast, leaving a small border.
  5. Roll up the turkey breast tightly to form a ballotine.
  6. Secure the ballotine with kitchen twine at intervals.
  7. Season the outside of the ballotine with salt and pepper.
  8. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the ballotine on all sides until golden brown.
  9. Transfer the skillet to the preheated oven.
  10. Roast for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
  11. Let the ballotine rest for 10-15 minutes before slicing and serving.
