- 1 (9 oz) package cheese tortellini (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/3 cup crumbled feta or mozzarella pearls
- 1/4 cup fresh basil, chopped
- 1/3 cup Italian vinaigrette or creamy dressing
- Salt and pepper to taste
Instructions
- Cook Tortellini: Boil tortellini according to package instructions. Drain and rinse under cold water to stop the cooking process.
- Chill Pasta: Toss the cooled tortellini with a drizzle of olive oil and chill for 15 minutes.
- Combine Ingredients: In a large bowl, add tortellini, tomatoes, olives, cucumber, onion, and cheese.
- Add Dressing: Pour dressing over the salad and toss gently to combine.
- Season & Garnish: Add salt, pepper, and fresh basil. Chill for another 10–15 minutes before serving.
Notes
You can substitute the vinaigrette with a creamy dressing for a richer variation. Add grilled chicken or salami for extra protein. Best served cold.
