Ingredients

  • 4 large potatoes, peeled and diced
  • 1 cup chopped yellow onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Chopped chives for garnish


Instructions

  1. Melt butter in a large pot over medium heat. Add onion, celery, and carrot. Cook until softened, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. In a separate bowl, whisk together milk and flour until smooth.
  5. Gradually stir the milk mixture into the pot. Cook, stirring constantly, until the soup thickens.
  6. Stir in heavy cream and shredded cheddar cheese until melted and smooth.
  7. Season with salt and pepper to taste.
  8. Ladle soup into bowls. Top with sour cream, crumbled bacon, and chopped chives.
