- 4 large potatoes, peeled and diced
- 1 cup chopped yellow onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 4 cloves garlic, minced
- 4 cups chicken broth
- 2 cups milk
- 1/2 cup heavy cream
- 1/2 cup shredded cheddar cheese
- 1/4 cup sour cream
- 4 slices bacon, cooked and crumbled
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Melt butter in a large pot over medium heat. Add onion, celery, and carrot. Cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
- In a separate bowl, whisk together milk and flour until smooth.
- Gradually stir the milk mixture into the pot. Cook, stirring constantly, until the soup thickens.
- Stir in heavy cream and shredded cheddar cheese until melted and smooth.
- Season with salt and pepper to taste.
- Ladle soup into bowls. Top with sour cream, crumbled bacon, and chopped chives.
Notes
- For a smoother soup, use an immersion blender to blend some of the potatoes.
- Adjust seasonings as needed.
- Feel free to add other toppings like green onions or a dollop of Greek yogurt.
