- 1 package (8.5 ounces) Jiffy Corn Muffin Mix
- 1/4 cup butter
- 1/4 cup chopped onion
- 1/4 cup chopped celery
- 1 cup chicken broth
- 1 egg
Instructions
- Prepare Jiffy Corn Muffin Mix according to package directions. Let cool.
- Preheat oven to 350°F (175°C).
- Melt butter in a skillet over medium heat. Add onion and celery and cook until softened, about 5 minutes.
- Crumble the cooled cornbread into a large bowl.
- Add the cooked onion and celery mixture, chicken broth, and egg to the bowl. Mix until well combined.
- Transfer the mixture to a greased baking dish.
- Bake for 20-25 minutes, or until heated through and lightly golden.
