Description

A hearty Tex-Mex casserole featuring seasoned ground beef or turkey, rice, and enchilada sauce, baked to perfection. This dish is a family-friendly, flavorful meal.


Ingredients

  • 1 pound ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10 ounces) enchilada sauce
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown the ground meat in a large skillet over medium-high heat. Drain off any excess fat.
  3. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more.
  4. Stir in the enchilada sauce, diced tomatoes (with their juice), cooked rice, chili powder, cumin, salt, and pepper.
  5. Bring the mixture to a simmer and cook for 5 minutes, stirring occasionally.
  6. Pour the mixture into a greased 9×13 inch baking dish.
  7. Sprinkle the shredded cheddar cheese evenly over the top.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  9. Let stand for 5 minutes before serving.

Notes

  • For a spicier dish, add a pinch of cayenne pepper or a diced jalapeño with the onions.
  • You can substitute cooked chicken for the ground meat.
  • Serve with your favorite Tex-Mex toppings like sour cream, salsa, or avocado.
