- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 tablespoon black pepper

- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 450°F (230°C).
- Pat the prime rib dry with paper towels.
- In a small bowl, mix together the olive oil, salt, pepper, garlic powder, onion powder, rosemary, and thyme.
- Rub the mixture all over the prime rib.
- Place the prime rib, fat-side up, on a rack in a roasting pan.
- Roast for 15 minutes at 450°F (230°C).
- Reduce the oven temperature to 325°F (160°C) and continue roasting for about 12-15 minutes per pound, or until the internal temperature reaches your desired doneness (120°F for rare, 130°F for medium-rare, 140°F for medium).
- Remove the prime rib from the oven and let it rest for at least 20 minutes before carving.
