A hearty and flavorful taco meat and potato bake.
Ingredients

- 1 pound ground beef
- 1 onion, chopped
- 1 packet taco seasoning
- 1 cup water
- 4 medium potatoes, peeled and diced
- 1 can (15 ounces) corn, drained
- 1 can (15 ounces) black beans, rinsed and drained
- 2 cups shredded cheddar cheese
Instructions
- Brown ground beef and onion. Drain off any grease.
- Stir in taco seasoning and water. Simmer for 5 minutes.
- In a greased baking dish, layer potatoes, corn, and black beans.
- Top with meat mixture.
- Bake at 375°F (190°C) for 45 minutes.
- Sprinkle with cheese and bake for another 5 minutes, or until cheese is melted.
Notes
- Serve with your favorite taco toppings like sour cream, salsa, and guacamole.
- You can use different types of cheese.
- For a spicier dish, add a pinch of cayenne pepper.
