Description

A hearty and flavorful taco meat and potato bake.


Ingredients

Scale
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 packet taco seasoning
  • 1 cup water
  • 4 medium potatoes, peeled and diced
  • 1 can (15 ounces) corn, drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 2 cups shredded cheddar cheese


Instructions

  1. Brown ground beef and onion. Drain off any grease.
  2. Stir in taco seasoning and water. Simmer for 5 minutes.
  3. In a greased baking dish, layer potatoes, corn, and black beans.
  4. Top with meat mixture.
  5. Bake at 375°F (190°C) for 45 minutes.
  6. Sprinkle with cheese and bake for another 5 minutes, or until cheese is melted.

Notes

  • Serve with your favorite taco toppings like sour cream, salsa, and guacamole.
  • You can use different types of cheese.
  • For a spicier dish, add a pinch of cayenne pepper.
