Description

A delicious sweet potato roll cake with a maple glaze.


Ingredients

Scale
  • 1 cup mashed sweet potato
  • 4 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • For the Maple Glaze:
  • 1 cup powdered sugar
  • ¼ cup maple syrup
  • 2-3 tablespoons milk


Instructions

  1. Preheat your oven to 375°F (190°C). Grease and flour a 10×15 inch jelly roll pan.
  2. In a bowl, whisk together the eggs and sugar until light and fluffy.
  3. Add vanilla, cinnamon, nutmeg, and baking powder. Mix well.
  4. Gently fold in the flour and salt.
  5. Fold in the mashed sweet potato.
  6. Pour batter into prepared pan and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the cake cool for a few minutes. Then, flip the cake onto a clean kitchen towel dusted with powdered sugar.
  8. Carefully roll the cake up with the towel, starting from a short end. Let it cool completely.
  9. For the glaze, whisk together powdered sugar, maple syrup, and milk until smooth. Add more milk for desired consistency.
  10. Unroll the cake. Spread the glaze over the cake.
  11. Reroll the cake. Slice and serve.

Notes

  • Make sure the sweet potato is cooled before using.
  • Don’t overbake the cake.
  • Adjust the amount of milk in the glaze to your liking.
