Description
A delicious sweet potato roll cake with a maple glaze.

- 1 cup mashed sweet potato
- 4 large eggs
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon baking powder
- ¼ teaspoon salt
- 1 cup all-purpose flour
- For the Maple Glaze:
- 1 cup powdered sugar
- ¼ cup maple syrup
- 2-3 tablespoons milk
Instructions
- Preheat your oven to 375°F (190°C). Grease and flour a 10×15 inch jelly roll pan.
- In a bowl, whisk together the eggs and sugar until light and fluffy.
- Add vanilla, cinnamon, nutmeg, and baking powder. Mix well.
- Gently fold in the flour and salt.
- Fold in the mashed sweet potato.
- Pour batter into prepared pan and bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool for a few minutes. Then, flip the cake onto a clean kitchen towel dusted with powdered sugar.
- Carefully roll the cake up with the towel, starting from a short end. Let it cool completely.
- For the glaze, whisk together powdered sugar, maple syrup, and milk until smooth. Add more milk for desired consistency.
- Unroll the cake. Spread the glaze over the cake.
- Reroll the cake. Slice and serve.
Notes
- Make sure the sweet potato is cooled before using.
- Don’t overbake the cake.
- Adjust the amount of milk in the glaze to your liking.
