- 1 large sweet potato, peeled and cubed
- 1/4 cup milk
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- Marshmallows
Instructions
- Boil sweet potatoes until soft.
- Mash sweet potatoes.
- Mix in milk, butter, brown sugar, and vanilla.
- Fill mini muffin cups with sweet potato mixture.
- Top with marshmallows.
- Broil until marshmallows are golden.
- Let cool and enjoy!
