Description

A classic holiday side dish featuring creamy mashed sweet potatoes baked with a sweet marshmallow topping.


Ingredients

Scale
  • 4 cups mashed sweet potatoes (about 4 large)
  • 1/2 cup butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 2 large eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 2 cups mini marshmallows


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine mashed sweet potatoes, melted butter, sugar, milk, beaten eggs, vanilla extract, salt, and cinnamon. Mix well until smooth.
  3. Pour the sweet potato mixture into a greased 9×13 inch baking dish.
  4. Bake for 20-25 minutes, or until set.
  5. Remove from oven and spread mini marshmallows evenly over the top.
  6. Return to oven and bake for another 5-10 minutes, or until marshmallows are golden brown and puffy.
  7. Serve warm.

Notes

  • For a richer flavor, you can add a pinch of nutmeg to the sweet potato mixture.
  • If using canned sweet potatoes, drain them well before mashing.
  • You can toast the marshmallows under the broiler for a darker color, but watch them closely to prevent burning.
