Description
A classic holiday side dish featuring creamy mashed sweet potatoes baked with a sweet marshmallow topping.
Ingredients

- 4 cups mashed sweet potatoes (about 4 large)
- 1/2 cup butter, melted
- 1/2 cup granulated sugar
- 1/4 cup milk
- 2 large eggs, beaten
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1/4 teaspoon cinnamon
- 2 cups mini marshmallows
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine mashed sweet potatoes, melted butter, sugar, milk, beaten eggs, vanilla extract, salt, and cinnamon. Mix well until smooth.
- Pour the sweet potato mixture into a greased 9×13 inch baking dish.
- Bake for 20-25 minutes, or until set.
- Remove from oven and spread mini marshmallows evenly over the top.
- Return to oven and bake for another 5-10 minutes, or until marshmallows are golden brown and puffy.
- Serve warm.
Notes
- For a richer flavor, you can add a pinch of nutmeg to the sweet potato mixture.
- If using canned sweet potatoes, drain them well before mashing.
- You can toast the marshmallows under the broiler for a darker color, but watch them closely to prevent burning.
