- 1/2 cup unsalted butter, softened
- 1/4 cup honey
Instructions
- Preheat oven to 400°F (200°C). Grease an 8×8 inch baking pan.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, melted butter, and egg.
- Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
- Pour batter into the prepared pan.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- While cornbread bakes, make the honey butter: In a bowl, beat together softened butter and honey until smooth.
- Let cornbread cool slightly. Serve warm with honey butter.
Notes
- For a slightly coarser cornbread, use stone-ground cornmeal.
- Adjust the amount of honey in the honey butter to your taste.
- You can add a tablespoon of honey to the cornbread batter for extra sweetness.
