- 1 cup yellow cornmeal

- 1 cup milk
- 1/4 cup vegetable oil

Instructions
- Preheat your oven to 400°F (200°C). Grease or line a muffin tin.
- In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, oil, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fill each muffin cup about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a slightly sweeter cornbread, you can add a tablespoon of honey to the wet ingredients.
- You can also add mix-ins like corn kernels or chopped jalapenos.
- Store leftover muffins in an airtight container at room temperature for up to 3 days.
