This Super Creamy Buffalo Chicken Mac & Cheese is a crowd-pleasing dish. It combines the flavors of buffalo chicken wings with classic mac and cheese.

- 1 pound elbow macaroni
- 1/2 cup butter
- 1/2 cup all-purpose flour
- 4 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups shredded cheddar cheese
- 2 cups cooked chicken, shredded
- 1 cup buffalo wing sauce
- 1/2 cup crumbled blue cheese (optional)
- Chopped green onions, for garnish (optional)
Instructions
- Cook macaroni according to package directions. Drain and set aside.
- In a large pot, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
- Season with salt and pepper.
- Reduce heat to low and add cheddar cheese, stirring until melted.
- Stir in cooked chicken and buffalo wing sauce.
- Add the cooked macaroni and stir to combine.
- If using, stir in blue cheese.
- Garnish with green onions, if desired.
- Serve immediately.

- Adjust the amount of buffalo sauce to your spice preference.
- You can use rotisserie chicken to save time.
