Description

These Strawberry Lemonade Cupcakes are a refreshing treat. They combine the flavors of sweet strawberries and tangy lemonade.


Ingredients

  • 1 box yellow cake mix
  • 1 cup chopped fresh strawberries
  • 1/2 cup lemonade
  • 1/4 cup vegetable oil
  • 3 eggs
  • For the frosting: 1 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup lemon juice
  • Red food coloring (optional)
  • Fresh strawberries for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, combine cake mix, strawberries, lemonade, oil, and eggs.
  3. Mix until just combined. Do not overmix.
  4. Fill cupcake liners about 2/3 full.
  5. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let cupcakes cool completely.
  7. Make the frosting: Beat butter until creamy. Gradually add powdered sugar and lemon juice.
  8. Beat until light and fluffy. Add red food coloring if desired.
  9. Frost the cooled cupcakes.
  10. Garnish with fresh strawberries.
