These Strawberry Lemonade Cupcakes are a refreshing treat. They combine the flavors of sweet strawberries and tangy lemonade.

- 1 box yellow cake mix
- 1 cup chopped fresh strawberries
- 1/2 cup lemonade
- 1/4 cup vegetable oil
- 3 eggs
- For the frosting: 1 cup butter, softened
- 4 cups powdered sugar
- 1/4 cup lemon juice
- Red food coloring (optional)
- Fresh strawberries for garnish
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, combine cake mix, strawberries, lemonade, oil, and eggs.
- Mix until just combined. Do not overmix.
- Fill cupcake liners about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let cupcakes cool completely.
- Make the frosting: Beat butter until creamy. Gradually add powdered sugar and lemon juice.
- Beat until light and fluffy. Add red food coloring if desired.
- Frost the cooled cupcakes.
- Garnish with fresh strawberries.
