Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 head of broccoli, cut into florets
  • 1 1/2 cups chicken broth
  • 1 cup uncooked long-grain rice
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken with salt and pepper.
  3. Cook chicken until browned, about 5-7 minutes. Remove and set aside.
  4. Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute.
  5. Add broccoli, chicken broth, and rice. Bring to a boil.
  6. Reduce heat, cover, and simmer for 15 minutes.
  7. Stir in chicken, heavy cream, and Parmesan cheese. Cook until heated through.

Notes

  • You can substitute cauliflower for broccoli.
