- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 head of broccoli, cut into florets
- 1 1/2 cups chicken broth
- 1 cup uncooked long-grain rice
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper.
- Cook chicken until browned, about 5-7 minutes. Remove and set aside.
- Add onion to the skillet and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute.
- Add broccoli, chicken broth, and rice. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Stir in chicken, heavy cream, and Parmesan cheese. Cook until heated through.
Notes
- You can substitute cauliflower for broccoli.
- Add other vegetables like carrots or bell peppers.
- For a spicier dish, add red pepper flakes.
