Description

A flavorful and easy Southwest Turkey Casserole.


Ingredients

Scale
  • 1 pound ground turkey
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 packet taco seasoning
  • 1 cup cooked rice
  • Shredded cheese for topping


Instructions

  1. Brown ground turkey in a skillet. Drain any grease.
  2. Add onion and bell pepper. Cook until softened.
  3. Stir in black beans, corn, diced tomatoes and green chilies, taco seasoning, and cooked rice.
  4. Transfer mixture to a casserole dish.
  5. Top with shredded cheese.
  6. Bake until cheese is melted and bubbly.

Notes

  • You can substitute ground beef or chicken for the turkey.
  • Add other vegetables like zucchini or mushrooms.
  • Use your favorite type of cheese.
