A flavorful and easy Southwest Turkey Casserole.

- 1 pound ground turkey
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chilies, undrained
- 1 packet taco seasoning
- 1 cup cooked rice
- Shredded cheese for topping
Instructions
- Brown ground turkey in a skillet. Drain any grease.
- Add onion and bell pepper. Cook until softened.
- Stir in black beans, corn, diced tomatoes and green chilies, taco seasoning, and cooked rice.
- Transfer mixture to a casserole dish.
- Top with shredded cheese.
- Bake until cheese is melted and bubbly.
Notes
- You can substitute ground beef or chicken for the turkey.
- Add other vegetables like zucchini or mushrooms.
- Use your favorite type of cheese.
