Description

A quick and healthy one-pan meal featuring seasoned ground beef and tender sweet potatoes with Southwest flavors.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 medium sweet potatoes, peeled and diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes with green chilies, undrained
  • 1/2 cup corn (fresh or frozen)
  • Optional toppings: shredded cheese, sour cream, cilantro, avocado


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add chopped onion and cook until softened, about 5 minutes.
  4. Stir in minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant.
  5. Add diced sweet potatoes, black beans, diced tomatoes with green chilies, and corn to the skillet.
  6. Stir everything to combine.
  7. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, or until sweet potatoes are tender, stirring occasionally.
  8. Serve hot, with your favorite toppings.

Notes

  • For a spicier dish, add a pinch of cayenne pepper.
  • If you don’t have fresh corn, frozen or canned corn works well.
