- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1/2 cup creamed corn
Instructions
- Preheat oven to 400°F (200°C). Grease a 10-inch cast iron skillet.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, melted butter, and egg.
- Add wet ingredients to dry ingredients and stir until just combined.
- Gently fold in creamed corn.
- Pour batter into the hot skillet.
- Bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let cool slightly before serving.
Notes
- For a crispier crust, heat the skillet in the oven while preheating.
- Adjust sugar to your liking.
- Serve warm with butter or honey.
