Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon baking soda
  • 6 tablespoons cold unsalted butter, cut into small pieces
  • 3/4 cup cold buttermilk


Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and baking soda.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
  4. Pour in the cold buttermilk and stir just until the dough comes together. Do not overmix.
  5. Turn the dough out onto a lightly floured surface and gently pat or roll it to about 3/4-inch thickness.
  6. Cut out biscuits using a floured biscuit cutter or a glass rim.
  7. Place the biscuits on an ungreased baking sheet.
  8. Bake for 12-15 minutes, or until golden brown.

  • For extra flaky biscuits, do not overwork the dough.
  • Ensure your buttermilk and butter are very cold for the best texture.
