Ingredients

  • 1 smoked ham hock or 1/4 lb salt pork, cut into pieces

  • 2 cloves garlic, minced
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • 1/4 teaspoon cayenne pepper (optional)


Instructions

  1. Combine black-eyed peas and chicken broth or water in a large pot.
  2. Add the ham hock or salt pork, onion, and garlic.
  3. Bring to a boil, then reduce heat, cover, and simmer for 1 to 1.5 hours, or until peas are tender.
  4. Stir in salt, black pepper, and cayenne pepper if using.
  5. Continue to simmer, uncovered, for another 15-20 minutes to allow flavors to meld and the liquid to thicken slightly.
  6. Remove the ham hock or salt pork before serving.

Notes

  • For a vegetarian version, omit the ham hock or salt pork and use vegetable broth. Add smoked paprika for a smoky flavor.
