Instructions

  1. Soak the dried black eyed peas in water overnight or use the quick soak method: cover with water and boil for 2 minutes, then let stand for 1 hour. Drain and rinse.
  2. Heat olive oil in a large pot or Dutch oven over medium heat.
  3. Add onion, celery, and bell pepper. Cook until softened, about 5-7 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the rinsed black eyed peas, chicken broth, smoked paprika, thyme, and cayenne pepper (if using).
