Instructions
- Soak the dried black eyed peas in water overnight or use the quick soak method: cover with water and boil for 2 minutes, then let stand for 1 hour. Drain and rinse.
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add onion, celery, and bell pepper. Cook until softened, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in the rinsed black eyed peas, chicken broth, smoked paprika, thyme, and cayenne pepper (if using).
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 45-60 minutes, or until peas are tender.
- Season with salt and black pepper to taste.
- Serve hot over cooked rice.

- For a vegetarian or vegan version, use vegetable broth instead of chicken broth.
- Add a ham hock or a strip of bacon for extra smoky flavor.
