Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 cup uncooked long-grain rice
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup chopped onion
- 1/2 cup chopped celery
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 350°F (175°C).
- Cook rice according to package directions.
- In a large bowl, combine cooked rice, chicken, soup, sour cream, milk, onion, celery, salt, and pepper.
- Pour mixture into a 9×13 inch baking dish.
- Bake for 30 minutes.
- Top with cheese and bake for another 15 minutes, or until cheese is melted and bubbly.
Notes
- You can substitute cooked chicken for raw, if preferred.
- Add vegetables like carrots or peas for extra flavor and nutrients.
