Description

Delicious soft lemon cookies with white chocolate.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1/4 cup lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup white chocolate chips


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Whisk together flour, baking soda, and salt.
  3. Cream butter and sugar.
  4. Beat in egg, lemon juice, zest, and vanilla.
  5. Gradually add dry ingredients.
  6. Stir in white chocolate chips.
  7. Drop by rounded tablespoons onto baking sheets.
  8. Bake for 9-11 minutes.
  9. Let cool on sheets.
