Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a small loaf pan (about 5×3 inches).
- In a small bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, rub the citrus zest into the sugar using your fingers. This releases the oils and enhances the flavor.
- Cream together the citrus sugar and softened butter until light and fluffy.
- Beat in the egg until combined.
- Stir in the milk and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
