Description

Tender beef bites and potatoes cooked in a savory garlic butter sauce in your slow cooker. This easy recipe is perfect for a weeknight meal.


Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 1.5 pounds baby potatoes, halved or quartered
  • 1/2 cup butter, melted
  • 6 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup beef broth
  • 2 tablespoons chopped fresh parsley, for garnish


Instructions

  1. Place beef cubes in the slow cooker.
  2. Add potatoes, melted butter, minced garlic, thyme, rosemary, salt, and pepper to the slow cooker.
  3. Pour beef broth over the ingredients.
  4. Stir to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender and potatoes are cooked through.
  6. Stir before serving. Garnish with fresh parsley.
