Description
A hearty and satisfying ground beef and vegetable casserole cooked slowly in a crockpot. This easy one-pot meal is perfect for a busy weeknight.

- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can green beans, drained
- 1 (10.75 ounce) can cream of mushroom soup
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
- Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
- Transfer the ground beef mixture to your slow cooker.
- Stir in the diced tomatoes, corn, green beans, and cream of mushroom soup.
- Season with salt and pepper to taste.
- Cover and cook on low for 4-6 hours, or on high for 2-3 hours.
- Stir in the shredded cheddar cheese during the last 15-20 minutes of cooking.
- Serve hot.
Notes
- For a spicier casserole, add a pinch of red pepper flakes or a dash of hot sauce.
- You can substitute cream of chicken soup or cream of celery soup for the cream of mushroom soup.
- Other vegetables like peas or diced potatoes can be added.
