Description

A hearty and satisfying ground beef and vegetable casserole cooked slowly in a crockpot. This easy one-pot meal is perfect for a busy weeknight.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can corn, drained
  • 1 (15 ounce) can green beans, drained
  • 1 (10.75 ounce) can cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste


Instructions

  1. Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
  2. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for 1 minute more.
  3. Transfer the ground beef mixture to your slow cooker.
  4. Stir in the diced tomatoes, corn, green beans, and cream of mushroom soup.
  5. Season with salt and pepper to taste.
  6. Cover and cook on low for 4-6 hours, or on high for 2-3 hours.
  7. Stir in the shredded cheddar cheese during the last 15-20 minutes of cooking.
  8. Serve hot.

Notes

  • For a spicier casserole, add a pinch of red pepper flakes or a dash of hot sauce.
  • You can substitute cream of chicken soup or cream of celery soup for the cream of mushroom soup.
  • Other vegetables like peas or diced potatoes can be added.
