Ingredients

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup frozen peas
- 2 tablespoons cornstarch (optional)
- 2 tablespoons cold water (optional)
Instructions
- Place chicken, onion, carrots, celery, garlic, chicken broth, diced tomatoes, thyme, rosemary, salt, and pepper in a slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and vegetables are tender.
- Stir in frozen peas during the last 30 minutes of cooking.
- If you want a thicker stew, whisk together cornstarch and cold water in a small bowl. Stir into the slow cooker during the last 30 minutes of cooking.
- Serve hot.
Notes
- You can add other vegetables, such as potatoes or green beans.
- For a spicier stew, add a pinch of red pepper flakes.
- Leftovers can be stored in the refrigerator for up to 3 days.
