A comforting and hearty slow cooker chicken barley soup. Perfect for a cold day.
Ingredients

- 1.5 lbs boneless, skinless chicken breasts
- 1 cup pearl barley
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 8 cups chicken broth
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- Place chicken breasts in the slow cooker.
- Add barley, onion, carrots, celery, broth, garlic, thyme, and rosemary.
- Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- Remove chicken and shred with two forks.
- Return chicken to the slow cooker and stir.
- Serve hot.
Notes
- You can add other vegetables, such as potatoes or peas.
- For a thicker soup, add a cornstarch slurry during the last 30 minutes of cooking.
- Adjust seasonings to your liking.
