- 2 bay leaves

- 1 teaspoon dried rosemary
- Salt and black pepper to taste
- 1 cup frozen peas (add in last 30 minutes)
- Fresh parsley, chopped for garnish
Instructions
- Sear the Beef: Toss beef cubes in flour, then sear in a skillet with olive oil until browned on all sides. Transfer to the slow cooker.
- Build the Base: In the same skillet, sauté onion, garlic, and celery until softened. Add tomato paste and cook for 1 minute. Deglaze the pan with red wine, scraping up browned bits, then pour into the slow cooker.
- Layer Ingredients: Add carrots and potatoes to the slow cooker, followed by the seared beef and onion mixture. Pour beef broth and Worcestershire sauce over the top. Stir in bay leaves, thyme, rosemary, salt, and pepper.
- Cook Low and Slow: Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender and vegetables are cooked through.
- Finish the Stew: In the last 30 minutes, add frozen peas. Adjust seasoning with salt and pepper as needed.

Notes
For richer flavor, don’t skip searing the beef. Yukon Gold potatoes hold their shape best during long cooking. If the broth is too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir in during the last 20 minutes.
