Hearty slow cooker beef stew perfect for chilly days.
Ingredients

- 1.5 lbs beef stew meat
- 1 tbsp olive oil
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 lb potatoes, peeled and cubed
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp cornstarch (optional, for thickening)
- 1/4 cup cold water (optional, for thickening)
Instructions
- Heat olive oil in a skillet. Brown the beef.
- Place beef in the slow cooker.
- Add onion, carrots, celery, and garlic to the slow cooker.
- Pour in beef broth.
- Add potatoes, thyme, and rosemary. Season with salt and pepper.
- Cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
- If desired, mix cornstarch and cold water. Stir into the stew during the last 30 minutes of cooking to thicken.
- Serve hot.
Notes
- You can add other vegetables like parsnips or sweet potatoes.
- For a richer flavor, use red wine instead of some of the beef broth.
- Adjust seasonings to your preference.
