Description

Hearty slow cooker beef stew perfect for chilly days.


Ingredients

Scale
  • 1.5 lbs beef stew meat
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 lb potatoes, peeled and cubed
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp cornstarch (optional, for thickening)
  • 1/4 cup cold water (optional, for thickening)


Instructions

  1. Heat olive oil in a skillet. Brown the beef.
  2. Place beef in the slow cooker.
  3. Add onion, carrots, celery, and garlic to the slow cooker.
  4. Pour in beef broth.
  5. Add potatoes, thyme, and rosemary. Season with salt and pepper.
  6. Cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
  7. If desired, mix cornstarch and cold water. Stir into the stew during the last 30 minutes of cooking to thicken.
  8. Serve hot.

Notes

  • You can add other vegetables like parsnips or sweet potatoes.
  • For a richer flavor, use red wine instead of some of the beef broth.
