Description
A rich and filling slow cooker soup with beef and lentils.
Ingredients

- 1.5 lbs beef stew meat
- 1 cup brown lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups beef broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Place beef, lentils, onion, carrots, celery, garlic, beef broth, diced tomatoes, thyme, rosemary, salt, and pepper in a slow cooker.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until beef is tender.
- Serve hot.
Notes
- Adjust seasonings to your taste.
- You can add other vegetables, such as potatoes or green beans.
- For a thicker soup, mash some of the lentils.
