Description

A rich and filling slow cooker soup with beef and lentils.


Ingredients

Scale
  • 1.5 lbs beef stew meat
  • 1 cup brown lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Place beef, lentils, onion, carrots, celery, garlic, beef broth, diced tomatoes, thyme, rosemary, salt, and pepper in a slow cooker.
  2. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, or until beef is tender.
  3. Serve hot.

Notes

  • Adjust seasonings to your taste.
  • You can add other vegetables, such as potatoes or green beans.
  • For a thicker soup, mash some of the lentils.
