- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1/2 cup fresh cranberries
- 1/4 cup orange juice
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Sear chicken thighs for 3-4 minutes per side until browned.
- Remove chicken from skillet and set aside.
- Add cranberries, orange juice, balsamic vinegar, honey, and garlic to the skillet.
- Cook, stirring, until cranberries begin to pop and sauce thickens, about 5 minutes.
- Return chicken to the skillet, coating it with the sauce.
- Simmer for another 5-7 minutes, or until chicken is cooked through.
- Serve hot.

- Adjust sweetness with more honey if desired.
