Description

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tbsp olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup orange juice
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • Salt and pepper to taste


Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Sear chicken thighs for 3-4 minutes per side until browned.
  4. Remove chicken from skillet and set aside.
  5. Add cranberries, orange juice, balsamic vinegar, honey, and garlic to the skillet.
  6. Cook, stirring, until cranberries begin to pop and sauce thickens, about 5 minutes.
  7. Return chicken to the skillet, coating it with the sauce.
  8. Simmer for another 5-7 minutes, or until chicken is cooked through.
  9. Serve hot.
