Description

A light and flavorful soup with chicken, vegetables, and a bright lemony taste.


Ingredients

  • Chicken breast, 1 pound
  • Chicken broth, 8 cups
  • Carrots, 2, chopped
  • Celery, 2 stalks, chopped
  • Onion, 1, chopped
  • Garlic, 2 cloves, minced
  • Zucchini, 1, chopped
  • Lemon, 1, juiced and zested
  • Fresh parsley, 1/4 cup, chopped
  • Salt and pepper to taste


Instructions

  1. In a pot, combine chicken, broth, carrots, celery, and onion.
  2. Bring to a boil, then reduce heat and simmer for 20 minutes, or until chicken is cooked.
  3. Remove chicken and shred.
  4. Add garlic, zucchini, lemon zest, and juice to the pot. Cook for 5 minutes.
  5. Return chicken to the pot. Season with salt and pepper.
  6. Stir in parsley. Serve hot.

Notes

  • Adjust vegetables based on your preference.
  • Add a pinch of red pepper flakes for heat.
  • Cook pasta or rice separately and add to the soup.
