Description
A light and flavorful soup with chicken, vegetables, and a bright lemony taste.
Ingredients
- Chicken breast, 1 pound
- Chicken broth, 8 cups
- Carrots, 2, chopped
- Celery, 2 stalks, chopped
- Onion, 1, chopped
- Garlic, 2 cloves, minced
- Zucchini, 1, chopped
- Lemon, 1, juiced and zested
- Fresh parsley, 1/4 cup, chopped
- Salt and pepper to taste
Instructions
- In a pot, combine chicken, broth, carrots, celery, and onion.
- Bring to a boil, then reduce heat and simmer for 20 minutes, or until chicken is cooked.
- Remove chicken and shred.
- Add garlic, zucchini, lemon zest, and juice to the pot. Cook for 5 minutes.
- Return chicken to the pot. Season with salt and pepper.
- Stir in parsley. Serve hot.
Notes
- Adjust vegetables based on your preference.
- Add a pinch of red pepper flakes for heat.
- Cook pasta or rice separately and add to the soup.
