Description
A simple and delicious carrot soup with garlic and cream.
Ingredients
- Carrots: 1 lb, peeled and chopped
- Garlic: 2 cloves, minced
- Vegetable Broth: 4 cups
- Heavy Cream: 1/2 cup
- Olive Oil: 1 tbsp
- Salt: To taste
- Pepper: To taste
- Fresh Parsley: For garnish
Instructions
- Heat olive oil in a pot.
- Sauté garlic until fragrant.
- Add carrots and cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Simmer until carrots are tender.
- Blend the soup until smooth.
- Stir in heavy cream.
- Season with salt and pepper.
- Garnish with parsley.
- Serve hot.

- For a vegan option, substitute the cream with coconut cream.
