A rich and creamy seafood bisque featuring tender shrimp and sweet crab meat in a flavorful broth.

- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrot
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups seafood or fish stock
- 1 cup heavy cream
- 1 pound shrimp, peeled and deveined
- 1/2 pound lump crab meat
- 1/4 teaspoon cayenne pepper
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrot. Cook until softened, about 8-10 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in flour and cook for 1-2 minutes, stirring constantly.
- Gradually whisk in seafood stock until smooth. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
- Stir in heavy cream and cayenne pepper.
- Add shrimp and crab meat to the pot. Cook until shrimp are pink and cooked through, about 3-5 minutes. Do not overcook.
- Season with salt and pepper to taste.
- Ladle bisque into bowls and garnish with fresh parsley.
Notes
- For a smoother bisque, you can puree the vegetable mixture before adding the stock and cream.
- Adjust cayenne pepper for desired spice level.
- Use good quality seafood stock for the best flavor.
