Description

A rich and creamy seafood bisque featuring tender shrimp and sweet crab meat in a flavorful broth.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrot
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups seafood or fish stock
  • 1 cup heavy cream
  • 1 pound shrimp, peeled and deveined
  • 1/2 pound lump crab meat
  • 1/4 teaspoon cayenne pepper
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, celery, and carrot. Cook until softened, about 8-10 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in flour and cook for 1-2 minutes, stirring constantly.
  4. Gradually whisk in seafood stock until smooth. Bring to a simmer, then reduce heat and cook for 15 minutes, stirring occasionally.
  5. Stir in heavy cream and cayenne pepper.
  6. Add shrimp and crab meat to the pot. Cook until shrimp are pink and cooked through, about 3-5 minutes. Do not overcook.
  7. Season with salt and pepper to taste.
  8. Ladle bisque into bowls and garnish with fresh parsley.

Notes

  • For a smoother bisque, you can puree the vegetable mixture before adding the stock and cream.
  • Adjust cayenne pepper for desired spice level.
