Description

A simple and delicious sheet pan meal featuring sausage, sweet potatoes, and Brussels sprouts. Perfect for a quick weeknight dinner.


Ingredients

  • 1 pound smoked sausage, sliced
  • 1.5 pounds sweet potatoes, cubed
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the sweet potatoes and Brussels sprouts with olive oil, smoked paprika, garlic powder, salt, and pepper.
  3. Spread the vegetables in a single layer on a large baking sheet.
  4. Roast for 20 minutes.
  5. Add the sliced sausage to the baking sheet with the vegetables.
  6. Continue to roast for another 15-20 minutes, or until the vegetables are tender and the sausage is browned.
  7. Serve hot.

Notes

  • For crispier Brussels sprouts, ensure they are cut side down on the baking sheet.
  • You can substitute chicken or turkey sausage for pork sausage.
