Description

A simple and delicious sheet pan meal featuring parmesan orzo and shrimp.


Ingredients

Scale
  • 1 pound shrimp, peeled and deveined
  • 1 cup orzo pasta
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss orzo, vegetables, olive oil, garlic, salt, and pepper on a sheet pan.
  3. Roast for 15 minutes.
  4. Add shrimp and Parmesan cheese to the sheet pan.
  5. Roast for an additional 8-10 minutes, or until shrimp is pink and cooked through and orzo is tender.
  6. Garnish with fresh parsley.
  7. Serve immediately.
