A simple and delicious sheet pan meal featuring parmesan orzo and shrimp.
Ingredients

- 1 pound shrimp, peeled and deveined
- 1 cup orzo pasta
- 1/2 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Toss orzo, vegetables, olive oil, garlic, salt, and pepper on a sheet pan.
- Roast for 15 minutes.
- Add shrimp and Parmesan cheese to the sheet pan.
- Roast for an additional 8-10 minutes, or until shrimp is pink and cooked through and orzo is tender.
- Garnish with fresh parsley.
- Serve immediately.
Notes
- You can substitute other vegetables like broccoli or asparagus.
- Adjust cooking time based on your oven and the size of the shrimp.
