- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 medium zucchini, chopped
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1/4 cup Kalamata olives, pitted
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
- 1/4 cup crumbled feta cheese (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken pieces, zucchini, red onion, cherry tomatoes, and Kalamata olives with olive oil, oregano, thyme, garlic powder, salt, and pepper.
- Spread the mixture in a single layer on a large baking sheet.
- Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
- If using, sprinkle crumbled feta cheese over the top during the last 5 minutes of baking.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add a pinch of red pepper flakes.
- Serve with a side of quinoa or rice for a complete meal.
