Description

A simple and healthy sheet pan meal featuring chicken and zucchini with Mediterranean flavors.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 medium zucchini, chopped
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 1/4 cup Kalamata olives, pitted
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces, zucchini, red onion, cherry tomatoes, and Kalamata olives with olive oil, oregano, thyme, garlic powder, salt, and pepper.
  3. Spread the mixture in a single layer on a large baking sheet.
  4. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender.
  5. If using, sprinkle crumbled feta cheese over the top during the last 5 minutes of baking.
  6. Garnish with fresh parsley before serving.
