- 1 box cornbread mix
- 1 pound cooked chicken, shredded
- 1 cup BBQ sauce
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped onion
- 2 eggs
- 1 cup milk
- 1/4 cup butter, melted
Instructions
- Preheat oven to 375°F (190°C).
- Prepare cornbread mix according to package directions.
- Stir in shredded chicken, BBQ sauce, onion, and half of the cheese.
- In a separate bowl, whisk together eggs, milk, and melted butter.
- Pour wet ingredients into cornbread mixture.
- Pour mixture into a greased baking dish.
- Sprinkle with remaining cheese.
- Bake for 30-35 minutes, or until golden brown.
- Let cool slightly before serving.
Notes
- You can use rotisserie chicken for convenience.
- Adjust BBQ sauce to your preference.
- Add a pinch of cayenne pepper for a kick.
