- 1 pound rigatoni
- 1 pound Italian sausage, casings removed
- 1 large onion, chopped
- 2 bell peppers (any color), chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and black pepper to taste
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cook rigatoni according to package directions until al dente. Drain and set aside.
- In a large skillet, cook Italian sausage over medium heat until browned. Drain off excess fat.
- Add chopped onion and bell peppers to the skillet with the sausage. Cook until vegetables are softened, about 5-7 minutes.
- Stir in minced garlic, crushed tomatoes, oregano, and basil. Season with salt and pepper. Bring to a simmer and cook for 10 minutes.
- Add the cooked rigatoni to the sauce. Stir to combine.
- Pour the mixture into a 9×13 inch baking dish.
- Sprinkle mozzarella and Parmesan cheeses evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let stand for 5 minutes before serving.
Notes
- You can use any type of Italian sausage (mild, hot, or sweet).
- Feel free to add other vegetables like mushrooms or zucchini.
- For a spicier dish, add a pinch of red pepper flakes to the sauce.
